For the love of cherry, almond and chocolate
As a child, one of my favorite treats around Valentine’s Day were those cherry cordials. I loved the chocolate and cherry flavors and of course the delicious gooey goodness that spills out of the chocolate. But once I got older I realized just how terrible those cordials were – loaded with high fructose corn syrup and all sorts of other yucky ingredients, so needless to say, I haven’t had one for a very long time.
When I was coming up with a Valentine’s day treat to share with you, it didn’t take me long to remember how much I love the cherry, almond and chocolate flavor combination – definitely a favorite of mine, second only to chocolate and peanut butter 😉
These chocolate covered cherry truffles only use a few ingredients and come together in about 10 minutes. The tartness of the cherries pair so nicely with the dark chocolate and the almond flavor pulls it all together.

How To Make Chocolate Covered Cherry Truffles
- 1 C raw almonds
- 1 C dried cherries
- 1/8 t almond extract
- 1/8 t vanilla extract
- 1 C dark chocolate chips
- 1 T coconut oil
Blend the first 4 ingredients in a high speed blender or food processor until the almonds release their oils and the mix becomes dough-like. Scrape down the sides of the blender as needed to make sure everything gets incorporated.
Then, with clean hands roll the dough into 1 inch balls and set aside.
Melt down your chocolate chips and coconut oil over low heat on a double broiler. Then dip your cherry truffles into the chocolate and place on a wax paper lined plate.
Freeze the truffles for 30 minutes to allow them to set. Once they are set, you can store them in an air tight container in the fridge for 1 week, or the freezer for a month.

- Blend the first 4 ingredients in a high speed blender or food processor until the almonds release their oils and the mix becomes dough-like.
